I feel that part of my responsibility as a meat eater is to use the meat as wisely as possible- which includes boiling all bones for stock (and I feel that way about veggies too- I love to use the peelings of organic cucumbers, and the roots of the watercress, in my soup stock.) It's all good.

That reminds me somewhat of those people who think it is okay to blow people humanely in war, but that it' not okay to use killing devices they consider less than humane. I, frankly, have never understood the difference. Dead is dead.
