JDN, As far as the meat is concerned, almost every part is good to eat. It is a lot leaner than beef, cooks with less mess, and tastes really good to me. It was the ultimate animal for the plains Indians. They used everything. Meat, hides for clothing and shelter, stomachs for boiling the meat, and the bones for many tasks, including hide scrapers, and small bones as sewing needles. I don't know how they used the hooves, but may have melted them down for some kind of glue.

I ordered some buffalo meat a couple of years ago, and the price of the meat was very economical, but it cost 4 times as much for the shipping than the meat itself. There are some eating establishments that offer buffalo meat, but I haven't seen any in Florida yet. Had a great meal of that meat in Nashville last year.

Our local meat market has buffalo and elk meat in stock everyday.
