the best Southern Pecan Pie recipe

simple and easy

[don't count the calories]

9 inch unbaked pie crust
1 cup light corn syrup
1 cup packed DARK brown sugar
3 eggs slightly beaten
1/3 c butter, melted
1/2 t salt
1 t vanilla
1 cup fresh pecan halves

set oven to 350

prepare crust [you can used a ready made flour crust]
in a large bowl combine the corn syrup, sugar, eggs, butter, salt and vanilla; mix well. pour the filling into the pie crust; sprinkle with the pecans. bake for 1 hr to 1 hr 10 minutes - begin testing the pie with a toothpick after 55 minutes]

pie is done when toothpick comes out clean [the secret is in the just right baking time, so experiment with your oven]

top off with fresh whipped cream or vanilla custard

perfection!
