secret is to not cook too far , just till "set"

Agree, it looks sort of like a "bulls eye" when time to pull it out. Still sticky in the middle, but when you touch (quickly! just a tap!) the outside ring of filling it is stiff to the touch. It will keep cooking after you pull it out.

Unless you like your pecan pie really dark. Some do. Then leave it in until the inside is more done.
