Carter was defending a 'past performance' title. Goldwater, in a relative sense, was an unknown quantity. '64 voters 'played safe' -- happy or otherwise. '80 voters knew Carter's level of ineptitude, first-hand. Carter, as it became apparent, wasn't even worth playing safe, the benefit afforded LBJ.

Interesting observation: Columnist George Will had this to say about the lasting effects of the 1964 election, "It took 16 years to count the votes, and Goldwater won."
