I only drink organic milk but buy it at Walmart as I am very cost conscious. I am willing to invest in my health but try to keep the cost to a minimum. This is why, in my opinion, you need to compare the cost of comparable meats as there are huge differences in quality and not just the price of steak. Substitution is a nice theory but practically I prefer the analogy that you can always substitute a bicycle for a car but the miles you can travel with a bicycle are distinctly limited. <g>
