FWIW Tom I've long been interested in flu. If memory serves me correctly I read a book many years ago that said that all flu is incubated in birds in Asia, I think the guts of ducks etc act as the reservoir, I do recall this book stating that the virus was then transfered to pack animals and began it's migration in that way. That's why I'm a bit confused at the term "bird flu" as I was under the impression that birds were always the reservoir.
