I always saw Chanterelles out in the woods when I worked in Oregon. I suspect they require a particular soil pH and organic component that is not easily reproduced for commercial growing. The Forest Service issues commercial collection permits, and I've heard that there have been gunfights over picking turf.

King Crab will probably survive if for no other reason than the horrible weather in the Bering Sea. The most dangerous job in the world, they say. I wouldn't want it.
