It depends what you mean by offended. If a liberal Jew feels that people are not respecting the fact that he is Jewish by sending him Xmas cards, do you consider that "offended"? What level of discomfort with a Christmas card constitutes an offense?

I don't get offended by cards, but then I'm an agnostic, so I don't have a competing strong belief being dissed (unlike folks of other religions, and atheists). I have a huge number of relatives who are Southern Baptists, and they even send me (along with Xmas cards) religious calendars, letters that frequently refer to the "end times", and clippings about religious matters. Whatever floats their boat, is what I figure- but I'm really glad they live in Ky, and not any closer.
