A pilot friend told me it would in fact be very easy to fly a 757 if you had the basic knowledge of controls.

The key point is that they took over the controls during stable flight.

I rather doubt they could have done much else. But they didn't need to.

Look at the difference between the two cockpits:

The yoke & rudder are all you need. It helps if you know a bit more. I'm pretty sure I could do it, in which case, most people with a bit of practice on a PC flight simulator could as well. Takeoffs and landings are a different matter.
