If you like the cynicism about the human condition et al, then I'd recommend the Watch ones - Guards! Guards!, Men at Arms, Feet of Clay etc and especially Night Watch which is superb in a rather darker and less humorous way. I'm just reading Going Postal, which (notwithstanding the title) I think needs some steeping in British 20thC styles/attitudes to really appreciate, but agin looks good and cynical.

For sheer humour and wit I prefer the wizard-based books which is where he started (satirising more 'sincere' fantasy literature and themes, there are a lot of in-jokes). Colour of Magic, Light Fantastic, and Interesting Times are the best of these, Reaper Man and Soul Music are also fine.
And I personally don't rate the witches ones at all, except Equal Rites.
