Could not a convention be authorized whose only allowed function is to change the 2nd amendment? Why not?

A convention wouldn't even be needed. You can amend the constitution by Congress and state legislatures voting to do so.

Additionally, anything they come out with has to go through a ratification process like the Constitution did and like any amendment does

Not exactly.

"The second method prescribed is for a Constitutional Convention to be called by two-thirds of the legislatures of the States, and for that Convention to propose one or more amendments. These amendments are then sent to the states to be approved by three-fourths of the legislatures or conventions. "

The states still have to approve it but the process is different and it doesn't require congress to vote for it even by a simple majority let alone the normal supermajority.

I justify my statements on the basis that I think they are the best way to maintain the most amount of freedom to keep and bear arms. If we start defending an untenable position, Barbara Boxer and her ilk will have a feeding frenzy.

Because of Barbara Boxer et all, a constitutional convention to increase individual freedom under the Second Amendment has no chance at all.

I think we better close ranks and quit arguing positions that will never buy us anything but grief.
