I think I'll skip the flank steak recipes. It sounds like the steak needs to be cooked for a time before it becomes moist.
My recipe says to only cook it for six or seven minutes.

I'm amazed your husband has lost so much weight on the Atkins diet. Does your husband exercise?

Flank steak is the juiciest, best-tasting steak I can think of, without the fat-marbling of the other steaks. Marinate in Kikoman Sauce, use high heat, it barbaques in no time.
And it's hardly ever on sale.
