I think that article puts too much racial influence on the Katrina impact on NO cuisine. Places got hit across the board (in terms of racial ownership profile). My guess is many black owned restaurants will return because the demand will still be there, same of lower priced white owned restaurants. It depends on what the population make-up will be to some degree, but there was a pretty large crossover in terms of where people went to eat. Hopefully access to capital for rebuilding won't be too significant a barrier......
