Of course pecans. I should have mentioned that. :•)

yup.. pecans.
they go well in many things.

i'm still feeling a little guilty
about posting the banana bread recipe,
so here's a recipe that is more for those
who are working out.

we have this salad very often
here at el rancho cocodrilo.

~ ~ ~

a few handfuls of washed baby spinach leaves
sliced strawberries (about a cup or so)
sliced anise (about a cup or so)
thinly sliced red onion (some... to taste)
1 apple cut into wedges (Gala or any crunchy salad apple)
pecan halves (about half a cup)
2 tablespoons honey
raspberry vinaigrette

wash baby spinach leaves,
prepare other ingredients
(except pecans and honey)
and put in salad bowl, and toss.

mix pecans and honey together
in small bowl and zap in microwave
or heat in small pot on stove
until honey coats the pecans.

drop honey covered pecans into
the salad.

serve salad on plates
drizzled with raspberry vinaigrette.
