I'm sure they would, but the ship might not be a freighter from Iran. It might have an Iranian crew but be under the flag of another nation, and not have Iran as either a normal port of call (it could pick up the nuke from another ship half way across the Med or further from Israel).

I don't think an action like this is likely, and it might be caught if it is attempted, but the risk is something Israel has to take very seriously, and people beyond Israel, while obviously in lesser danger, should also take seriously.
