PEX does better with freezing water lines than copper, often surviving with no damage at all. (I have personal experience with this, having replaced a frozen, busted copper line with PEX, having it freeze AGAIN, but be fine with no leaks once thawed - it's got a line warmer now for winter) I don't think it would hurt empty tubing either. PEX is really tuff stuff, but fairly flexible compared to copper.
