Well, in that case I would start out with "Gravad Lax" as made where it originated and in particular by me every year for New Years Eve.
Our family recipe is at least 5 generations old and it is GREAT stuff.
Next from the fish department again, the best herring in the world comes from the low salt Northern part of the Baltic Sea and is called "Stromming".
The lower the salt, the lower the fat and the smaller - but the more delicious they get.

One (in-)famous variation on this subject is "Surstromming", the (in-) comes from its obnoxious smell, pretty much like, oops----.
When you open the can where those little friends dwell under pressure from the fermentation, the mercaptane oozes out and unless you already had a few schnapps you run for hiding! It stinks - but the taste, oh man!

You drink Swedish aquavit with it. Never Absolut, that's an American invention only.
