I have no doubt that many backyard grillers call cooking a steak or a hamburger over a hot grill "barbecue." As I said, it's a common misnomer. But it's not regional. It is what it is.

There are writers who claim that barbacoa is over an open flame, as well, but if you actually read the recipes, it's over coals, or perhaps coals on top, as in a Caja China.
