Yes, I read that too. And yes, there are a few gaps -- but I guess a lot of that comes back to experience. For example, if faced with no sugar, people up my way would go back to tapping maple trees the way so many once did, which would pretty much negate the need to be growing sugar beet and sorghum, etc... Btw, this spring, I noticed more local people tapping a few trees again. Hadn't seen so much of that in maybe 20 years.
