I'm about to install it [Parallels Desktop] on my IMac 20 but have run into a question. Would it recognize a wireless (bluetooth) keyboard and mouse?

I don't own them so don't know from personal experience, but according to this article the answer is yes, they will be recognized:

On a "20-inch iMac with a 2-gigahertz Intel Core Duo processor....The [Parallels Desktop] system also automatically recognized the Mac's wireless Internet connection as well as the computer's wireless Bluetooth keyboard and mouse."
