Most small businesspersons would rather take the money in a tax preference form. Employees including CEOs of large corporations don't have as many options. The small business owner generally lives frugally and leaves the profits in the company to grow it and takes the money out later triggering capital gains taxes instead of employment taxes.

The name of the game is tax deferment.
