Tree rings and measuring carbon 12 to carbon 13 ratios in seashells are two methods for inferring temperatures. Some informed guesses can be made with ice cores. Records of wine production, glacier advancement, how far north certain animals and plants lived can give other information on temperature.

Even older than that, Elroy. Scientists have done ice cores that tell us what the climate was like 750,000 years ago. Hard to believe for a layman, but true nonetheless. Of course, this is not so spectacular considering that astronomers are telling us what the universe may have been like at the beginning, big bang and beyond.
