OT: Although I usually roast my pine nuts before putting them on a salad, raw works fine for me in pesto. But try it out yourself and see which one you like.

Pesto is classic peasant food -- every little town in Italy has their own particular variation on the basic recipe, just like Greek salad in rural Greece.

One other thing you can try is to use different types of basil. I tend to stick with the classic Genovese style, but there are many many other varieties around. Mind you, the time I got too experimental and made pesto with cinnamon basil it was not a success...
