Because crop loss is expensive and salt is cheap.

Cargill and ADM regard corn less as food and more as an industrial raw material. In Pollan's book he claims that 40% of what we see in a typical chain grocery store is corn-based or has corn additives.

Maybe because its fairly subjective, and also is effected by many other things besides the genetics of the plant.
