If you're one of the people you mentioned who grow specialty lettuce in your back yard, of course you need another source of income. That type of activity is intended to supplement your income. Nobody can afford to pay you a living wage growing specialty lettuce in your back yard.

The demand is there but you can't provide the supply at a reasonable cost.

Around here, the ones who make a living at it do so year after year after year. The rules allow them to sell, not just what they grow personally, but stuff their friends and neighbors grow, as well.

I used to keep bees. Almost nobody makes a living keeping bees, it's all retired people and people who do it in their spare time.
