Really? I never heard that. Maybe yours wasn't prepared properly. I have only experience with elk, deer, and moose. Their meat has so little fat that it gets tough really fast when overcooked. My wife is so afraid of bugs that she overcooks it routinely, and therefore doesn't like it. Maybe the same thing with wild turkey? I don't hunt ducks and geese precisely because I don't care for their meat. I do like to watch them, however, which gives me another reason not to hunt them.
