Would asserting that God didn't make apples red be blasphemy to those who believe that God did?

It could be considered as such. Blasphemy (at least in the absence of specific codified rules about what is blasphemy) is at least somewhat subjective. One could believe that God made apples red without thinking that it showed contempt to God to say that he did not.

Say we have a religion called Atlas whose followers believe that Atlas holds up the earth. Saying it isn't so would be blasphemy. So NASA sends cameras into space, we get pictures of the earth and there's no Atlas. Should we not say so because it would be wrong to blaspheme?

Well if you still believe that Atlas holds up the earth after the pictures were made available (Atlas is invisible?, the photo's are faked? whatever?), then you may or may not consider it blasphemy. And you may or may not believe that blasphemy should be forbidden.

You could have different types of Atlast supporters (perhaps different sects)

Atlas supporter number 1 (AS#1)- Atlas holds up the earth, but he and/or I understand that you believe otherwise and don't have a problem with it. Perhaps in the fullness of time you will come to understand the wisdom of the Atlasian way.

AS#2 - Atlas hold up the earth and it is a supreme and evil disrespect to The Great Atlas that you say otherwise. But you have a right to your beliefs, and should not be punished for them (at least on this world, in the afterlife Atlas will probably crush you)

AS#3 - "Die you blasphemer against Atlas!"
