I found some good vegetarian curries at the local target superstore. All you have to do is nuke them for a couple of minutes and they're ready to serve, and only $1.99 a package.

Karen really SHOULD give us a recipe for T-day.

I have jars of coriander, cardamom, turmeric and cumin, and all the other spices you can mix in curry (cloves, ginger, fenugreek, etc). I mix my spices in a little prep bowl and then sprinkle them over the squash as it cooks- I use olive oil for the saute pan.I stir the squash a lot, so the spices are evenly distributed.

Euterpe, my daughter has gone completely vegan, I'll ask her for recipes...I think she's cooking up a tofurkey this year. But i DO have a vegan-type recipe that my dad always fixed Thanksgiving - his "Viking salad."

Very simple - one can of kidney beans, rinsed. One diced onion, maybe four diced celery stalks. For the "sauce", apple cider vinegar diluted with water 2 to 1 and sugar, although agave sugar would be a good sub, mix that together, pour over the veggies and chill overnight...very simple, but good, really.
