Riesling can work well for Thanksgiving. For example, the Bonny Doon Pacific Rim, or the German "Dr. L" could be a suitable accompaniment for many tables.

I've also had good luck with Zin, you just have to avoid the high alcohol monsters. I've had luck with Renwood Sierra Series, this year it will be a Gnarly Head.

Assuming the typical turkey and trimings, I like the idea of letting guests choose between a good sauvignon blanc/Sancerre and a pinot noir. I can't think of a better way to cover the landscape. If beef is on the table, a cab is obviously called for.
