I think from the species you named you are probably a west coaster.

Tilapia is imo an east coast southern fish as that is where most of the U.S. fish farms are located. They also ship it in from Asia.

Here in Florida tilapia are everywhere, every pond is full of them. They are vegetarians so hard to catch on hook and line (though they will take a small lure when guarding their nests).

If the fish you had was mushy it was probably frozen, thawed, frozen again, then sold. Pretty much every fish gets frozen once and that is okay, but frozen twice makes it inedible.

I just baked it as per the directions. I can't remember what they were now- but we all liked it.

I've also bought it at whole foods and floured it (whole wheat flour) and prepared tilapia piccatta- which everyone in my family likes. I think tilapia is better with some whole flour breading.
