Like you, I lack complete facts. During the construction of the transcontinental railroad they needed to feed thousands. Buffalo was a locally available resource. Paid hunters decimated the buffalo population to feed the workers. They would field dress them and load the meat into wagons leaving what they did not want.

Native plains people had used the entire animal, feeling it was sinful to waste. They even used the sinew to make ropes. Every organ and tissue had a use.
