As an expert on the theory of general relativity you would hardly talk about "we" because this is widely believed to be an established and proven matter. Same goes for quantum mechanics, no "we now believe..." when discussing quantum mechanics or general relativity and what Einstein believed and proved to a certain extent.

The "we" is commonly used by "experts" when expressing their opinions about very lose theories "in development". Where the lack of personal clout is replaced by the "we" implying the masses of "experts" backing the same thus allegedebly irrefutable opinion.
