Takes me 7/8. Hot simmer rather then boiling the snot out of it and it takes that long until the bones are done and have released all of their flavor. I mean you can make a better stock in an hour then you can buy from the store, but the longer you take the more intense the flavor. Which is why I do it at work rather then using up a whole Saturday.
