So if pleasantness is the pay level criteria, then the meat packers (one of the most hellish jobs in the country) ought to be paid as much as CEOs and more than baseball stars?

Nope, pleasantness of the job relative to pay is not the issue, it is supply of workers. At even zero salary there will still be a supply of actors and singers. In the case of the meat packers if the salary were zero, the supply of workers would go to zero, and there would be no packed meat. We'd have to get all our packed meat from Mexico!

You should cap pay when additional pay is not necessary to get workers. $200k per year tops would be plenty to attract enough entertainers and athletes to their respective fields. I don't think the public would even notice a difference in quality of sports or entertainment media.
