I've tried it both ways........tins and pan......and prefer the pan variety. The rib roast turned out great...perfectly med rare. The secret is to get it out of the oven and tent it for 15-20 min when it reaches an internal temp of 120. Best roast I ever cooked.

We worked today. Doctors don't take near as much time off as they did before HMO's.<g> I had a desk full of work piled on it when I got there this morning. I was out all last week with the flu. Our employees, while they weren't over joyed at me not being there to field the calls from some of our more demanding clients, they were glad I didn't pass it off to them.<g>

I LOVE Yorkshire Pudding, but have never made it...I always say next time, but so far there has been no next time.
