For the past 4-5 years, I've cooked all roasts, both pork and beef, in my pressure cooker. About 12 minutes per pound for beef, 15 minutes for pork. I put the veggies in with it and it comes out incredible. I might try the tenting idea next time, while I make gravy. I don't do this unless I have company, which is rare. But, I do get raves on these meals. I absolutely LOVE my pressure cooker.
