That's right, by the time the store has to take the meat off sale, the aging is perfect. My father was a meat cutter many, many years ago and he was the one who told me to look for that. I just came from the store where I bot 4 NY strips for a little over 3 bucks each. About 1/2 price. When they're frozen I'll shrink wrap 'em and into the freezer for another day. I'll be glad when I can get back outside to my grill. But, too much snow out there right now and I don't shovel.
