A cast iron pot is supposed to be best for chili.... I have a cast aluminum huge, deep frying pan, but you have to be careful it doesn't burn. H. Allen Smith, a writer and sell-proclaimed chili king says you are not civilized if you don't have an iron pot.

(Actually I had 2 - regular dutch oven type and then a huge one we used for camping - I remember turning a chuck roast into a smoldering, charred lump when I buried it with coals on it over 40 years ago!)
