You would love the way I prepare squash. I finally got my hubby to try it and now he eats it whenever I serve it. Can't get him to eat brussels sprouts though.

God never intended humans to eat squash

But God gave us dairy cows and whoever invented the Squash and Cheese Casserole. Tipper Gore, maybe, or Betty Crocker? Anyway, a pretty decent and edible side dish.

How about okra?

Several years ago I finally had good okra. It was dipped in a seasoned coating and fried til crusty brown. Served in a restaurant.
