If you want to kick it up a bit, do what Paul Prudhomme does.

Uses veal liver and does the blackened thing to it.

I think the only way to cook calves liver is in a cast iron pan.

I never see chicken hearts for sale anymore.

Used to be a place downtown that served a lot of fried chicken, that's back when they came with the guts. First Wednesday of every month they had a special, hearts, livers and gizzards, a full plate full covered with gravy, for 25 cents.
