Simmer? Fry? I wash them well and roll them in a lot of flour. I put a bunch of Crisco in the the skillet and toss the gizzard and hearts in. I keep turning them and, probably cook them like that for about 15 minutes, maybe a few longer. I take them out when they "look" right. I put them in the oven while I make gravy. I drool into the gravy, in anticipation.
