Cooking for one is a challenge. During the winter, when I can't get outside to grill, I tend to eat Lean Cuisine several times a week. I've found a few of those that I can nearly enjoy and it prevents over eating. I'll fix a big skillet of spaghetti sauce and freeze it in one-serving sizes with the food saver. That works well. When I can get to the grill, I'll do a half dozen skinless chicken breasts or pork chops and freeze them one at a time. I combine these things with the Green Giant "single servings" of broccoli and cheese, or Brussels Sprouts and cheese. I manage to eat well and not gain weight. I even allow myself a couple scoops of vanilla ice cream a few times a week.

I likely have 200+ cookbooks and after doing enough reading and experimenting you start realizing why chefs do certain things and then creating your own dishes is the logical next step.

Excellent cookbook, and they describe their experiments and how they perfected the final recipe in many cases.
