Do you buy your meat from a specialty shop? I never see steaks at the grocery any where near an inch thick, let alone thicker. I saw some tenderloins the other day that looked to be about 3/4 inch thick. One had a $14 price tag on it. I wait for that same piece of beef to reach its "age limit" and they mark it down to half price. I have a freezer full of half price steaks.
