Everyone that has had it seems to enjoy it. Just finished up a cook out in our wonderful 70° weather. Unusually warm. Burgers on the grill.

First the Buns:
1/2 cup milk
1/2 cup warm water
1/8 t plus 1 T sugar
one packet active yeast
3 1/4 cup all purpose flour
1 t kosher salt
2T cold unsalted butter cut into pieces
1/2 cup plus 2 t olive oil
1 large egg lightly beaten
2 T heavy cream

Gently warm the milk in a small saucepan over medium heat. Combine the water, yeast and 1/8t of sugar in a small bowl, stir and let it sit until foamy. Combine the remaining sugar, flour and salt in a large bowl and stir to combine. Add butter chunks and mix in by hand until it is course crumbs. Add the yeast mixture, warm milk and 1/2 cup of olive oil and stir with a wooden spoon to form a soft dough.

Let sit for 20 minutes to proof then turn out onto a floured surface and knead until smooth and elastic. Knead for 5 more minutes once you think you are done. This dough is very soft and we don't want to add a bunch more flour so be sparing. Grease a bowl with the 2 t of olive olive oil, turn to coat, cover and leave in fridge over night.

Remove from fridge and it should be about doubled, if not let it sit on the counter until it has then punch down and divide into 8 pieces about 3 1/2 oz each on a lightly floured surface. On a baking sheet lined with parchment and lightly floured press out your 8 pieces into a flat disc properly spaced. Again be gentle. Whisk together the egg and cream in a small bowl to make an egg wash and using a pastry brunch gently paint on the egg wash on top of each bun. Set aside and let double again.

Place in an oven preheated to 375 with the rack in the lower 1/3 and bake until golden brown and done with the toothpick trick about 15/20 minutes. Also turn your sheet about half way through then dump on a rack to cool completely.

Next come burgers and caramelized onions.
