The secret to good deep fried oysters - besides the quality of the oyster of course - is that it has to be very light on the breading.
Mostly Japanese restaurants know how to handle that.
You go to The Fishmarket in San Diego for instance and they sure know how produce uneatable deep fried oysters as I must assume most of their clients like them.
Heavy on the breading, tiny and tasteless inside.
