There was an episode of "King of the Hill" where the owner of the propane company, having been banned from the local strip club and finding he had too much time on his hands, started to actively manage the company again. Amazingly the business seemed to be making more money despite the fact the boss was pissing everyone off.

Hank studied the books and found out that the apparent improvement resulted from the fact that the boss wasn't making his regular withdrawals from the cash drawer.

Doesn't the IRS have some sort of template about how much a certain type of business or employee (i.e. waiters) are supposed to make, and penalize you if you can't prove otherwise?

When I first opened my first business, [home solar systems] in the 80's, I pitched one to an IRS agent. Didn't find that out until I got audited. That audit caught me when I was small, cost me no money, and taught me the "do's and don'ts." From then on, I just made sure I CYA'd.
