Depends on their diet also. Around here the deer eat the same thing as beef cows and taste very similar. Up in northern WI they eat more from the forest floor and taste quite different then the mid state deer. Really bizarre are the mule deer I would shoot in WY. They eat so much sage that you can actually taste sage in their meat. Not at all unpleasant at least to me.

But yes if you know what venison tastes like I wouldn't sneak it by you.
