High latitude regions have a higher latitude for growing larger crops as the day is longer. World record cabbages are grown in the Yukon and Alaska. If you add a growing chamber such as a solarium, or greenhouse, and hydroponics -- you can grow any plant you want as quick as a wink and as big as, say, Alaska. The experts in this technique are easy to find in many federal institutions.

What I heard -->

Because they grow so fast in this environment you can even add ice cream to the plant, aim a solar reflector at it and make Baked Alaska on the vine.

Many factors affect crop health:
- loss of snow cover in winter.
- variance in precipitation (drought and flooding)
- rising sea levels

Most crops aren't grown in high elevations.

Who cares food production?... in the U.S. we're dying of obesity. The system is self correcting and humans are at the top and most vulnerable to systematic degradation. If we're (humans) are polluting the earth we'll be the first to go.
