Thirty years ago, migrant workers were very common and the primary source of labor at harvest time. Immigrants, illegal or legal, were also a primary source of labor in businesses we now call sweat shops (which still exist). Believe it or not, they can still be found in NYC and its surrounding environs. We have a community of Columbians nearby that does piece work in a hat factory.
